		<description><![CDATA[I&#039;m not sure about the health claims made for garlic; however, I find when I use it, I&#039;m generally making healthy recipes like stir fries and tomato sauces (lycopene in cooked tomatoes is an anti-oxidant). 

And I&#039;d recommend avoiding Chinese garlic - they soak the bulbs in formaldehyde to get them so white. I try to buy lots of local garlic when it&#039;s in season to get through the winter, though currently my supply is running critically low. My husband likes to make veggie stock and he throws in heads of garlic among all the vegetables, and simmers until the liquid is down by half. Makes great soups.]]></description>
